Our Lapsang Souchoung is produced from wide leaf, fully mature tea that is oxidized and indirectly smoked over a pinewood fire.
Our kombucha ferment condenses the silky pine smoke overtones the tea is known for and emphasizes the often-overlooked characteristics of a well-produced lapsang - a savory, nearly bready sumptuousness.
Balanced gracefully between an enveloping smokiness and amber undertones, this ferment lives somewhere between a toasty digestiv and a lightly peated scotch. We recommend drinking it alongside wild mushrooms, cream sauces, and fermented or charred meats.
Enjoy somewhere a little north of chilled red wine, but don’t be afraid to let it open up at higher temperatures - ideally on a bearskin rug.
