With a stone fruit sweetness, earthy gramineae, and hints of camphor and limestone, this is one of our most complex and wonderful ferments. A spring picked red tea from Yunnan where teas have a long and storied history of fermentation. A honey ferment and a cremant-like mouthfeel make this one of our more elegant offerings. Available only in limited quantities this ferment will not be available again until late 2020.
